Crumbled Koeksister Ice Cream Sundae
Ingredients
4-6 koeksisters
4 scoops vanilla ice cream
2 tablespoons African Gold Extra Virgin Olive Oil
2 tablespoons honey
¼ cup nuts such as almonds or pistachios, chopped
½ teaspoon cinnamon
Method
1. Finely chop or crumble koeksisters over 4 scoops of vanilla ice cream.
2. Drizzle with African Gold Extra Virgin Olive Oil and honey.
3. Sprinkle with chopped nuts and cinnamon for a delightfully easy-to-put-together pudding!
Spiced Cabbage Salad
Ingredients
3 cups shredded cabbage
2 carrots, grated
1 red onion, thinly sliced
3 tablespoons African Gold Extra Virgin Olive Oil
2 tablespoons white wine vinegar
1 tablespoon brown sugar
1 teaspoon ground cumin
1 teaspoon coriander
Salt and pepper, to taste
Method
1. In a large bowl, toss together shredded cabbage, grated carrots, and thinly sliced red onion.
2. In a separate bowl, whisk together African Gold Extra Virgin Olive Oil, white wine vinegar, brown sugar, ground cumin, coriander, salt, and pepper to taste.
3. Pour the dressing over the shredded vegetables and toss to coat. Allow it to marinate for a while before serving.
Chakalaka Guacamole and Pita Chips
Ingredients
2-3 ripe avocados
½ cup chakalaka
2 tablespoons lime juice
2 tablespoons coriander, chopped
4 rounds pita bread
African Gold Extra Virgin Olive Oil (for brushing)
Method
1. Mash the 2-3 ripe avocados and fold chakalaka, lime juice, and chopped coriander.
2. Brush pita bread rounds with African Gold Extra Virgin Olive Oil, cut them into triangles, and toast for pita chips.
3. Dip and enjoy this delicious guacamole with a spicy kick.
