Stew and roasted chicken are two staples found around African family dining tables during Christmas, and so we have a lamb stew recipe with a twist as well as a BBQ roasted chicken to share with you.
If you cannot decide which one to make, just make both of them because they will not break your bank, we promise.

Lamb, Chickpea & Olives Stew
6 servings
Ingredients:
4 cups stewing lamb
2 onions chopped
3 cloves garlic minced
2 chilled chopped
2 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
1 tsp cinnamon
1 can whole tomatoes in tomato juice
3 cups chicken stock
1 can chickpeas drained
1 cup pitted olives
4 tbsp parsley chopped
Steps
Preheat your oven to 200 degrees. In small batches sear lamb on all sides and set aside. In the same pot, fry onions, garlic, and chili till soft. Add spices and fry for 1 minute.
Add a can of tomatoes and chicken stock and mix. Add lamb and mix well. Place in oven and bake for 1 hour.
Return pot to stove and add olives and chickpeas. Cook for further 10 minutes. Add parsley and serve hot.

BBQ Roasted Chicken
6/8 servings
Ingredients:
1 whole chicken cleaned
6 Tbs bbq sauce
4 tsp oil
3 tsp BBQ spice
3 tsp chicken spice
2 tsp masala
2 tsp garlic and ginger
1 tsp dry mixed herbs

Steps
Mix all the ingredients together, rub all over the chicken. Leave to marinate overnight or for a few hours.
Place chicken on a sheet of foil and seal. Place on an oven tray and put into a preheated oven of 180°c.
Let it cook on both sides for 30mins each. Open up the foil and let it brown on both sides. Enjoy.
